Why is it that most sommeliers would say that sushi and bubbles are BFF’s? Well, firstly if you are gonna spend a hefty chuck of change on a nice sushi dinner, you absolutely do not want to make the mistake of overpowering all of those wonderfully delicate flavors with a bold glass of Chardonnay, or red wine for that matter. The idea behind the happy marriage between sushi and sparkling wine is that it keeps the palate cleansed so you can focus on the quality of the sushi. Similarly, the minerality of bubbles, allows full expression to the briny aromas and texture of the raw fish. They also cut through the fat and brininess of the meal without overpowering. Okay, all this talk is making me hungry.... and thirsty! Lunchtime!
