Okay, a little bit of a cheat move for a self-proclaimed foodie like myself, but sometimes you can still impress your guests even when you're in a time crunch. The other thing I love about this recipe, is that most of the ingredients have a decent store date so you can keep them on hand in the fridge for those unexpected arrivals. It also only takes 5 minutes to throw together and you could easily pass for a genius chef with this coming out of your kitchen.
Seafood is infamous for pairing with champagnes and bubbles, and this recipe is no exception! The saltiness of the salmon and the crisp zing of a glass of sparkling wine is a party in your mouth. Enjoy!
Smoked Salmon Blini
INGREDIENTS
1 package of pre-made blinis
4 oz of smoked salmon
½ cup crème fraîche
Pinch of salt and pepper
Fresh dill or chive for garnish
INSTRUCTIONS
Bring blini to room temperature just before serving. Space out blinis evenly on a serving platter. Scoop crème fraîche into a small mixing bowl and add a pinch of salt and pepper. Whisk with hand mixer for 1 minute or until cream becomes light and fluffy like whipped cream. Top each blini with a piece of smoked salmon. Add a small dollop of the creme fraiche and a sprig of dill or chive.
