Let’s be honest, there’s never any “left over” bubbles… but even though I never have any unfinished bottles lying around, I am still a huge fan of summery sparkling wine cocktails to help fight the heat and add to the enjoyment. Now keep in mind, for these recipes below, I wouldn’t advise using a pricey champagne, but a well-priced Cava will certainly do the trick (and even be delicious to serve on its own if you don't use it all for the cocktail).
