Pairing: This is a really flexible champagne that can be used as an aperitif, but also can be paired with meals ranging from fish tacos to chicken dishes with cream sauces.
Producer Info: Founder Lucien Collard came from a deep rooted heritage in the region of Champagne, France. His ancestors had been growing wine in Bouzy since the 17th century. Two generations prior, in 1919, Lucien Collard wed Julia Bara, daughter of the established grand cru champagne-making family Paul Bara. This union gave birth to a true family tradition of passing the vineyard from father to son with their own wine-growing legacy. The vineyards are certified organic and all hand harvested, which is not surprising as Lucien was truly a man of integrity in every area of producing his champagne. Lucien’s cuvées have been created with an ambition and passion to share his legacy and vision of an exceptional champagne. I have been honored with the friendship of both Lucien and his god-daughter Auriane over the past 5 years and it is with a very sad heart that I share the news of beloved owner Lucien’s recent passing. Though our time working together was brief, his impact on me personally and professionally was profound.
