Tasting Notes: This champagne is floral and delicate. It opens with subtle notes of white flowers and fresh bread, then evolves towards fresh mineral variations. It is elegant, fruity and softly acidic, with a bright minerality on the finish.

Pairing: This Blanc de Blancs would be delicious with oysters, grilled shrimp, or scallops.

Producer Info: Yannick Prevoteau is a family-owned and run vineyard in Damery near Epernay for five generations since 1911. It produces a unique range of grower Champagne from 63 different parcels across 9 premium terroirs of the Marne Valley. The vineyards are grown with the utmost respect to nature and sustainable practices, and as a result, the winery is High Environmental Value (HVE) Level 3 certified, as well as Sustainable Viticulture in Champagne certified. The minimal intervention in the vineyards and in the cellar enables the true expression of terroir throughout this premium champagne. The vineyard is characterized by chalky and clay soil, some areas with a green clay from a once-meandering Marne river.
